It's a little difficult to find the Gaiden manga, however there are a couple of places that I know of that do indeed have this series. Minekura-sensei has recently released another manga late last year (2005) that brings us "pretty much" full circle. And it only took several years, LOL!
Saiyuki Gaiden may be available at:

Anime Gamers USA (this is where I got the second Gaiden manga. You can also find the first one there as well)
We also hope that somebody will license this at some point, *coughTokyoPopcoughhellowakeup* which would rock so hard.
